Ah, shortbread. Humble and yet so very tasty. It's one of my favorite kinds of cookies (as is evidenced by the fact that I have now featured two different types of it). The added oats make this one a little different, and, in my mind, make these acceptable breakfast food.
Canadian Oatmeal Shortbread
1 cup butter
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 tsp baking soda
2 cups rolled oats
Mix butter and sugar. Add flour, soda, and oats. Chill for 1 hour.
Heat oven to 350. Take a tablespoon sized amount and roll into balls. Flatten slightly. Place on ungreased cookie sheet and bake for 15 minutes.
